Liam loves blueberry muffins and we have tried multiple recipes over the years. After some tweaking, we settled on this recipe and these muffins are his favorite!

Blueberry Muffins with a Cinnamon Sugar Crumb Top

Check out these amazing blueberry muffins! They are a favorite in our house and when we make them. they do not last long!

Ingredients

1 ½ cups AP Flour
-
¾ cup Sugar
-
2 tsp Baking Powder
-
½ tsp Salt
-
⅓ cup Vegetable Oil
-
1 Egg
-
⅓ cup Milk
-
1 cup Blueberries
-
½ cup Sugar
-
⅓ cup AP Flour
-
¼ cup Butter - cut into small cubes

2 tsp Ground Cinnamon

For Sugar Crumb Top:
Directions
Preheat oven to 400F
Combine AP flour, sugar, baking powder, & salt in a large bowl and set aside.
Combine egg, oil, & milk into a separate bowl and mix well. Pour into dry mix and mix until combined.
Fold in blueberries and set aside.
Add Sugar Crumb topping to a separate bowl & blend together with a fork until combined into a crumbly mixture.
Spoon batter into a greased or lined muffin baking tin and top evenly with Sugar Crumb topping.
Bake 20-25 minutes, until a toothpick comes out clean.
