Jerk Chicken and Pasta in a Spicy Cream Sauce

This Spicy Chicken dish is made with our Caribbean Jerk Seasoning rub and brings the heat with the flavor! Done in less than 45 minutes and a perfect addition to your personal recipe book!
Ingredients

2 boneless chicken breasts, sliced into small strips

1 sweet pepper, sliced
-
1 onion, sliced

1-2 Tablespoons Claireβs Kitchen Caribbean Jerk Seasoning. Adjust for desired level of spiciness.

4 Tablespoons Butter, divided

1 cup grated Parmesan cheese
-
1 cup heavy cream
-
8 oz cooked pasta, prepared to instructions on package

Shredded Parmesan Cheese for garnish
Directions
Slice Chicken into small strips, about 2 inches long, and season liberally with Caribbean Jerk Seasoning. Set aside.
Slice pepper and onion into thin strips. Set aside.
Boil water and season with salt. When at a full boil, add pasta and cook as directed on package.
While water is coming to a boil, add 1 TBSP Olive Oil to a separate pan on medium heat. Add chicken and cook until done, about 3-4 minutes per side, depending on thickness. Remove chicken and set aside.
Add 1 TBSP butter to pan with increase heat to medium high. Add peppers and cook for 2-3 minutes. Add onion and cook mixture until edges start to lightly brown. Combine with chicken and set aside.
Add remaining butter to pan and reduce heat to medium. Add Caribbean Jerk Seasoning and stir together. Whisk in heavy cream. Add grated Parmesan and combine. Do not boil.
Combine sauce with chicken mixture and stir. Add drained pasta to mix, cooking on medium, and stirring regularly.
Plate mixture and garnish with shredded Parmesan cheese.

Recipe Note
I used penne pasta for this, but feel free to substitute with your favorite. You can also sautΓ© mushrooms, zucchini, cherry or Roma tomatoes, and add with the onion & pepper mixture. Experiment away!
